Here on the rock strwen slopes of the sacred Mt. Zoomie, we have an overabundance of Gray Squirrels. Very tasty critters if I may say so. I just use a regular stew recipe, and substitute the beef with the squirrel (minus the bones of course). In fact, they will be getting pretty plump here in a few months. My 20 GA is ready.

stewed,fried,in dumplings,anyway you want to cook em,they are very tastey
But i'm getting lazy in my old age,i use a minnow cage with a spring loaded lid,put some corn in the bottom of it,and collect them in the morning.
No pellets to bust these old choppers as well

now correct me if i'm wrong here, but aren't those things just rats with fluffy tails?
we have too many cayotes to have squirrel problems
i think they like em raw
Pheasant is really good. One day, I'll try Beer Can Pheasant. Wild pheasants are a little more gamier than the ranch pheasants at the local club, but man, nothing some Shake & Bake wont take care of.

My favorite way to do pheasant is, with a shaker mix [my own] and then deep fried It would be one of my top three choices if I was having my "last meal"

Next time you cook gator,try soaking it in some salt water 1st,then flour it,and deep fry,also try cold smoking it like you would salmon or sailfish,
that is my favorite way of doing it.

not joking at all,it's one of the best ones to smoke,
i did several of then when i lived in So Fla.
Soak it in a salt brine overnight,then cold smoke for about 14 hours.
