The Kephart is made from the 7" Butcher Knife. One needs to use a Dremel with a metal-cutting saw blade. Then employ a belt sander to reshape the blade (I saw it done on you tube). After it's been reshaped to the desired form the handle needs to be sanded down to a slimmer profile.
It's quite a bit of work.

i have 3 knives in the kitchin, a bread knife, an old filet knife, and my main knife, it's a 12'' carbon steel blade with copper rivets holding the wood scales on. blade has a beautiful petina, i'm guessing its at least 100 years old.
