New chef's knife

Post by FivePointOh »

The man in the brown suit dropped this off today. Now I have to go shopping and get some supplies to chop up. :)

Shun 10" Damascus Blade Chef's Knife 15.5" total length. Wouldn't even fit diagonally in my scanner.

Seki City, which is famous as the sword center of Japan, where KAI factories are located, is proud of its over 700 years tradition of cutlery manufacture.

32 layers clad fine Damask Stainless steel and cobalt, Molybdenum, vanadium super steel, with stainless bolster and butt cap. Comes with black laminated pakka wood handle, each coming in their own gift box.

Hahaha, cardboard gift box. I was expection wood!

Chemical description for V-Gold steel:
C: 0.95-1.05
Cr: 14.5-15.3
Mo: 0.90-1.20
V: 0.10-0.30
Co: 1.30-1.50
Damask Steel: SUS 410+Nickel Steel
Bolster and Butt Cap: SUS 416 Stainless Steel

Just used it today to slice up some veggies for my lunchtime salad. Man is it sweet, almost slices by itself. Also the handle is kinda D shaped and fits the right hand like it was molded to it. :) OK, where's the raw meat!!! Hehehe!

Not sure what you question is. This is a forum within TalkBlade
dedicated to kitchen knives.

Recap:5.0 bought a particularly interesting example. BtB asked some questions and a link was provided.

Although the same knife is no longer available at the referenced site,
others similar but smaller ones are.

Let me see... The Forum is titled "Professional kitchen knives." The thread is titled "New chef's knife."

Gee, I wonder what this could be about? It's a puzzlement alright...

P.S.
FYI - This thread is almos' THREE years olde!
