hey you hot sauce lovers in here did ya ever make your own hot sauce?
im workin on it
1st batch was too vineger tasteing and the peppers were wimpy no heat and watery/runny
2nd batch too thick and too salty.
anyone have any recipes/tips for a good sauce?
ok ok so its not knife related, hmm, ill chop the peppers with an otf just to see if it can be done lol

HOT STUFF...
The best peppers to use in a sauce is habanero, 28,000 BTU's baby. On that note...I have a chili recipe that has a flavor that can't be beat...and if it's too much for you to stand, it makes a great wall-paper remover.

Daves insanity, After Death, 100% Pain, [75% Pain is also very good].
And of course my own homemade incindiaries. I think I'm going to name
mine "You Bastard" because that's what most people say when they try it.
[It takes a while before they say anything there is too much coughing and drinking water, bad idea, eat bread DO NOT drink water].

what did you guys use in your own? i used
12 jalipenos (all that was available at the time)
2 limes
1 onion
3 carrots
3 garlic cloves
vineger
salt
i chopped it all up put it in a food processor and let it fly til it was all liquified,then i strained it through a coffee filter and bottled the juice, i threw the the pepper pulp that was left in some chill
(whew that was rather good) but the sauce wasnt bad for taste but was runny/watered down

Habaneros, Jalapenos, Thai, Assorted loose hot peppers [that's what the super market calls them] horse-radish, onions, garlic, salt, pepper, shalots, curry powder, assorted spices [varies every time], hot and spicey V-8 juice.
On the similar heat level as Dave's, 100% Pain or After Death.
A guy I work with makes Chili in the same heat range [very few people eat it, I go back for seconds]. I hate beans in Chili but you can't taste them in his Chili.

Chili Recipe...Cowboy style.
If you want to try a good chili....here's the ingredients:
1 1/2 cups dry pinto beans...Soak then cook before using in chili.
2 quarts water...for soaking beans only.
Salt ...to taste
4 dried Pasilla chilies....see below
4 dried Ancho chilies
4 dried cascabel chilies
1 pound bacon
2 large onions
6 cloves garlic
6 jalapeno peppers
2 pounds lean beef stew meat...finely chopped
3 tablespoons chili powder
2 Tlbs cumin
2 Tabls coriander
2 Tabls Cayenne
1 cup weak coffee
3 cups unsalted beef stock
1 cup chopped Cilantro....for garnish
Note: Cover the dry chilies in boiling water and soak for 4 to 6 hours. Remove the seeds and stems, and using a bit of the soaking water, puree ina blender until smooth. Set aside until needed.
Note: After frying the bacon, only use 1/4 cup...use for frying jalapeno, onion and garlic. Coarsely chop the bacon and add to the beans.
Cooking time 1 to 1 1/2 hours. Add The beans with bacon at the end and cook for 15 min.
