Hand sanding, using sanding blocks, up to 2000 grit will give you a fine finish. 600-800 grit + buffing may work fine, depending on how good you are at buffing. Try using WD 40 on the blade and wheel as you buff for a more consistent finish.

Sure. Canvas will not be real shiny. Linen polishes well. Paper polishes the best.
White linen picks up polishing compound, and is difficult to make look good.
Wax it when you are finished.

I have only used purpleheart once, so I'm not sure. I think I just waxed it, but the Arrow finish should work. Same with cocobolo, but I usually just wax it, too.

It would be much simpler to buy a 10" 1750 RPM bench grinder from Harbor Freight for $115, some 8" buffing wheels, and compounds. You can polish with the pneumatic setup, but your results won't be as good. Most things are done a certain way because many people with experience decided that was the be...

Yes, I sand it in with fresh 400 or 600 grit wet/dry sandpaper. Do this until the grain is filled. Then, 2-3 coats without sanding. It does take quite some time to dry.
Finish with paste wax.
