The Kephart is made from the 7" Butcher Knife. One needs to use a Dremel with a metal-cutting saw blade. Then employ a belt sander to reshape the blade (I saw it done on you tube). I think that the pull unit on the base of the knife is how it's cocked. How it's fired I don't know.

The METIS is a single edge knife. The DADLEY seems more like the "Sticker". At $9.97 + shipping, how could I go wrong? Dad always liked the Old Hickory "Skinner" knife. (I'll confess that I like it too). I am considering an 8" "Slicer" as well as a "Skinner" for kitchen use.

Go to http://www.fastech.com and look carefully for the Ganzo. Buy one, then tell me what you think. Bill DeShivs thought enough to buy one for Debbie's heavy use. This knife is built to both "dish it out" and "take it" as well.

Beat that for the price.
