It's a real Japanese Rizzuto. The bolsters are stainless, and are soldered to the liners. You have to remove the pins at the blade, rear, and center of the knife, then remove the pins holding the scales on. The scales will break. The problem with Hubertus knives IS the easily replaceable spring. Unless it is firmly seated, the blade won't open fully, and it can break the backspring. I have one just like it. Your knife is listed in the 1931 Weltersbach catalog as the model #26. It is a strange knife as it has both a shellpuller blade and shell puller bolsters. I suspect yours was made after 1950. It is a fine old knife.

If you want to do it right, the Microtec UT-6 is the way to go. The slide button is on the side, so it is ambidextrous. The steel is excellent. Let me put it this way: the seller of the "turn of the century" knife was caught red-handed selling reworked knives with new markings. He disappointed a lot of us.
BTW- the ivory is way too new.
