The shell wrap knives had the red dot safety because people were closing the knives with the safety on and breaking the spring or damaging the sear.
Many years ago I bought a new in the box Edwin Jay 5-1/2" shell wrap. It came with instructions to not close the blade with the safety on-referencing ...

I don't think they are too big, but there is no reason to use stock that large unless it's a very big knife.
Just look at other knives of the type you are building. Anything from 1MM to 2.2MM is common.
Brass or nickel silver is the preferred material for ease of use.

2.8 MM is pretty big.
Of the 3 materials, I would suggest brass. Copper and aluminum will bend if you aren't careful.

Oh- and the original question' distinguishing fake stag from real.

Real stag and bone both have little lines in them that nerves ran through. They are called "Haversian canals".
