The shell wrap knives had the red dot safety because people were closing the knives with the safety on and breaking the spring or damaging the sear.

I don't think they are too big, but there is no reason to use stock that large unless it's a very big knife.
Just look at other knives of the type you are building. Anything from 1MM to 2.2MM is common.
Brass or nickel silver is the preferred material for ease of use.

Of the 3 materials, I would suggest brass. Copper and aluminum will bend if you aren't careful.

Skipper tried to be the only switchblade dealer in the country. He lied to the makers and swindled them.

Jules Vane is correct. Skipper was a crook and a criminal. He went to jail for attempted murder. I believe he died while incarcerated. He was a stain on the automatic knife collecting community.

Perhaps scribing on bare steel, and then going over the grind lines with a Q tip saturated in Dykem blue.
Make the lines blue instead of the steel surface.

I use a Sharpie, and then a light coat of clear spray acrylic- but I use a bandsaw for cutting steel.
An angle grinder produces too much heat and can burn the steel.
A high tensile hacksaw might be a better choice.
