Re: Sabol Brothers gyuto's
Took a quick comparison pic of the Sabol Brothers gyuto's together with 2 freshly sharpened Japanese gyuto's which are in use with 2 Dutch professional Chefs. The top knife is a Takamura 210 mm gyuto in R2/SG2 steel, and below it is a Kotetsu 210 mm Type III gyuto, also in R2/SG2 steel. https://i.po...

Re: Sabol Brothers gyuto's
The knives were delivered this afternoon, and these are the first pictures. More detailed ones will follow later. The N690 kiridashi knife @ 61-62 HRC was a present because the brothers thought that after payment i had to wait a bit longer than usual for the knives to be sent, even though the reason...

Re: Sabol Brothers gyuto's
While waiting for my own gyuto's i found this recently made clip from the Amy Learns To Cook channel, showing a woman's view on 3 different Sabol Brothers kitchen knives in N690 steel.

Yes, those dimples are meant to be there and should aid in food release (at least a bit)

Re: Takamura R2 gyuto 210 sharpening
Update on the Takamura R2 210 Gyuto: According to the Chef this edge done on Paper Wheels lasted him 2 months in his commercial kitchen, which was just as long as the factory edge had lasted him. During that time he sometimes touched up the edge by stropping it on an MDF strop with 1.0 micron diamon...

Re: Vintage Kronenkrebs Fahrtenmesser / Scout knife
Depends on your definition of expensive, 8) If and when this knife gets put up for sale in the Netherlands my asking price will be somewhere between 275.00 and 325.00 Euro's (currently around 315 to 372 US dollars) plus shipping. But before it ever comes to that the knife will be tested by me in the...

Currently busy with modifying another large sawback scout knife, this one manufactured by the no longer existing Solingen based firm of Kronenkrebs. The stag handle was way too thick for my hands, and the low sabergrind geometry was far from ideal for it's intended use as a large allround camp knife...
